Ami du Chambertin literally means ""friend of Chambertin wine" refers to a moist and buttery short cylinder of cow's milk Cheese with a Rust -colored rind. It is similar to Epoisses cheese.
It is an artisan cheese made in the Burgundy village of Gevry-Chambertin which is also famous for its wines. The cheese, like Epoisses de Bougogne is dipped in Marc de Bourgogne as it ripened and develops a bright orange sticky rind. The cheese can have a strong aroma, but the centre is milder and pleasant.
