Arista is the Italian term for spitted or oven-roasted pork. It refers to seasoned and roasted boned loin of pork. The seasonings include garlic, rosemary and pepper. It may also refer to roast pig. This Italian dish is traditionally cooked and served in January when pigs are slaughtered.

Arista is pronounced "ah-ree-stah"
