Maconnais AOC refers to a Cheese from the Burgundy Region of France that has becomes harder and saltier with ripening. It is a goat's Cheese with an ivory-coloured rind which becomes brown with age. It is soft, becoming dry and crumbly with maturity.

A young cheese, 4-5 cm diameter, 3 - 4 cm high, will be light in colour and have a fresh, milky flavour. However this cheese can mature for several weeks, developing a grey bloom on the skin and a more salty, tangy flavour.

In 2006 Maconnais was awarded AOC status
