Shanghai noodles refers to white noodles made from wheat flour and water, similar to the somen boodles of Japan that is used in Vietnamese cooking They can be thick or thin. They are cook in boiling water before use. Fresh noodles are dusted lightly with flour before packing to stop them from sticking together. Shanghai noodles must be stored in the refrigerator if not yet for cooking, however, dried wheat flour noodles are also available.
