Tandoor refers to an Indian deep, clay oven that has very high temperatures. It is the name given to a barrel-shaped oven made of bricks and clay. The oven contains a flamed bottom, fueled by wood, coal, dung or gas, which produces a very high heat. It is probably the most versatile kitchen equipment in the Indian kitchen. It is used to bake traditional tandoori dishes of various meats, poultry and fish. These tandoori dishes are usually served with a green salad and mint mixed yogurt sauce.
