Acidulated water is referring to a mixture of water and a small amount of vinegar or lemon juice. It is used to purify or prevent discoloration (tunring black) in meats, fruits and vegetables sliced, peeled or cut up during preparation or before cooking.
To make acidulated water, squeeze half of a lemon into a medium bowl of water.
