a l' americaine is referring to a dish, usually lobster prepared with tomatoes, wine and seasonings. It is a French word literally means "american style". This is a famous classic dish of shellfish, lobster shells, truffles, white wine, brandy and fish fumet, garlic, shallots and tomatoes, but also with bacon.
