Insalata di cavolo is the Italian term which means "coleslaw", a sald made of thinly sliced cabbage, sometimes with added carrots and onions, and mayonnaise.
We grow up, loving Cabbage salad, my mom used to make this by slicing thinly the cabbage, then blanched it in hot water for some minutes. After blanching, she mixed it with sliced tomatoes and season it with salt. We always eat this Repolyo salad with fried fish (galunggong -the cheapest fish in the Philippines). What a lovely way to cope up poverty. |
