Ravioli fritti di ricotta is one of the special desserts from Sulcis, one of the 7 Regions of Sardinia. These are "fried ravioli" made from the same mixture as the casing for the pardulas, while the middle is a mixture of ricotta cheese, flour, sugar, eggs, lemon and grated orange peel.
