Abats is a French term which means offal. It refers to internal organs of butchered animals sold mainly by stores call "triperies" that specialize in this. White offal are sweetbreads, feet, brains. Red offal are heart, lungs, liver.


It is the edible internal organs, such as kidneys, liver, heart, feet, etc. It occasionally describes the giblets of poultry or game fowl, including the gizzard, a muscular organ which acts as second stomach, liver, heart and neck.

Abats is pronounced "ah-bah"
