Squab refers to a pigeon which has not yet been fed on grain, or has never flown and therefore is very tender. It refers to a young pigeon approximately four weeks old, having dark, tender meat and weighing no more than one pound. The meat is usually roasted or grilled and is also suitable for braising. It is often served rare.
