Capacollo
Capacollo refer to Italian cured pork shoulder butts which are salted, cured, coated with herbs and spices and air dried. It is a fairly lean and delicately-flavored Italian food is usually served as an appetizer as part of a selection of cold cuts in a platter known as Affettati Misti . No heat is involved in preparing Capocollo.
