Maldive Fish refers to a a seasoning used in almost all Sri Lankan dishes. It is made from Bonito which is also known as Skipjack which is boiled, smoked and sun-dried until rock-hard. Shavings or tiny chunks of Maldive fish are sprinkled into Curries, Sambols and Mallums.
