Congo Peas are dried peas with a sweet flavour. These green and brown peas are popular in Jamaican cooking. They can be used in rice and peas instead of kidneys beans.
These pulses and beans are a natural source of protein, and are high in fibre. As with kidneys beans, Congo peas need soaking in water overnight before cooking.
It is also known as Gungo Peas or Pigeon peas
