Coddle is an Irish dish that refers to a simple stew made from pork, sausages, rashers, sliced onions and  potatoes  and cooked in a stock. The term comes from the slow coddling or simmering of the dish. Coddle is a traditional Irish filling and hearty dish that traditionally comes from Dublin.
