Haldi refers to a very important Indian spice known as turmeric. It is a rhizome where its fresh roots are used occasionally as a vegetable or in pickles. The ground spice is extensively used in some Hindi curry dishes to give the familiar yellow colour to curries. However, haldi should be use sparingly to avoid bitterness. It is also known in Hindi as Huldi
