Salsa verde is an Italian term which means "green sauce ". Salsa verde is an Italian dressing or sauce made from a mixture of green herbs, like parsley, mint or chives, extra virgin oil, garlic, anchovy fillets, capers and vinegar. Salsa verde was originally known as bagnet verd, (the Piedmontese word for green sauce), the basic ingredient being parsley. Salsa verde is used for boiled meats or fish.
