Greixonera refers to Ibiza's dessert; a cinnamon-flavored pudding. It is made from the mixture of crumbled Ensaimadas (the Balearic spiral bun), eggs, milk cinnamon powder, lemon rind and Zest and sugar to taste. It can also be made with left-over breads like it used to, but nowadays, Ensaimada and other sorts of bread are the favored ones.
