Moloukhiya refers to Egyptian Green Soup, the basic ingredient of which is the Moloukhiya leaves available in Egypt. It is a traditional Egyptian dish that is cooked using fresh Moloukhiya leaves, chicken stock and various herbs and spices. It is sometimes prepared with spicy ingredients or less spicy depending on the taste of the consumer. It is also advisable to use okra to thicken the soup, if spinach or chard is used in the absence of Moloukhiya leaves. It is a very healthy and can be used as a regular soup.

In countries, where Moloukhiya leaves are not available, spinach or chard can be used instead. It should be serve steaming and it is traditionally served with boiled chicken and over boiled rice.
