- Revenir (Faire) :

Revenir (Faire) is a French term which means to quickly color a food in hot fat or oil; to give vegetables, meat or fish a brief preliminary cooking in butter or other heated fat until they have taken on a very slight color. It is an important process in cooking majority of French soups, ragouts, and daubes and in the braising of meat and poultry.
