Tallarines is Ecuadorian term for "noodle dishes" cooked with different kinds of meats (chicken, pork, beef. etc) or or seafood (shrimps). Examples are: Tallarin con Pollo (noodle/pasta with chicken); Tallarin de Camarones (pasta/noodles with shrimps); Tallarin Saltado (fried noodles); Tallarines Saltados de Salchicha (noodles with sausage); Tallarines Verdes (pesto-like noodle dish); Tallarines de Mariscos (seafood noodles).

Tallarines is also one of the dishes from Peru.
