Usal pav refers to simple everyday food and typical to the western state of Maharashtra. Usal which is a mix of usually five different sprouted lentils with potatoes and various spices. The number may vary depending on what the housewife has on hand.
It is usually served with a crunchy sev (thin noodles of chickpea batter), chopped onions and chopped green chillies. It is typically eaten with pav ( dinner roll) or plain boiled rice.
Usal is served in restaurants and is also a popular street food. Simple and nutritious, it makes a satisfying meal when paired with bread or rice.
Serve it with a sev or even vegetable chips which can be bought stores. The crunch adds more textural interest and makes the dish even more enjoyable.
