Boxdy also known as Boxty refers to an Irish simple potato pancakes. Traditionally, boxdy is a mixture of grated raw potatoes, leftover mashed potatoes, baking powder, and sweet milk. Nowadays, boxdy is cooked with added flavors, like onions and/or garlic.
