Kaju Barfi refers to a soft diamond-shaped candy made from cashew powder blended with sugar. This fudge is popularly known as Kaju Katri. Almonds, pistachios or walnuts may be substituted for cashews. This sweet cashew milk fudge is often presented as gift during Diwali festival. Kaju is the Indian word for "cashew".
