Mahon is a traditional, unpasteurised cow's milk Cheese produced on the island of Minorca off the northeast coast of Spain. The hard, orange rind tends to be greasy as a result of being rubbed with a mixture of butter, oil and paprika.

Mahon is sold at various stages of maturity. When fresh and un-matured, it has a smooth and supple texture and a sweet and fruity aroma. As it ages, it becomes harder and more granular in texture with misshapen holes and a sharp, somewhat salty flavour. It makes an excellent dessert cheese with dried fruit or sweets or may be used in casseroles.
