Matjeshering refers to a German food made of young salted herring, a kind of fish. It is usually eaten as a filling for a type of bread called Brötchen and served with Potato salad (Kartoffelsalat) and pickled cucumber (Salzgurken /Cornichons ) and also with sliced apples and onions.

Matjes is a German word for "young herring". It is cooked in several variations of different states of Germany. They are salted, pickled or smoked. Among the popular German dishes made of Matjes are: Bratheringe, Rollmöpse, Matjesfilet, Bismarkhering or Salzheringe, among others.
