Papa Negra literally means "black potato" in Spanish, refers to a variety of potato that is still grown in the Canary Islands, but not found elsewhere in other European countries. Papa Negra has a black skin (almost black) and yellow flesh with an intense and delicious flavor. It was very unfortunate that I was not able to visit a market while I was in Teneriffe. And the only food I wanted to taste was Paella. Fortunately, I was able to eat Papas Arrugadas served with a Mojo.
