Zuppa pavese also known as Zuppa alla pavese is an Italian soup cooked in the manner of Pavia. It refers to a clear beef broth which includes a poached egg, topped with grated Cheese which can be served atop of fried bread.
Zuppa alla pavese is a Lombardian broth poured over fried toast and raw eggs.
