Bortsh refers to Finnish beetroot soup made of beetroot, cabbage, onions and carrots sliced thinly with just a hint of vinegar and served hot with sour cream. Bortsh is a dish from the eastern part of Finland called Carelia, with some influences from Russia. Finnish cuisine is a mixture between Scandinavia and Russian cuisines, hence this beetsoup called Bortsh came about as a culinary tradition from Russia.
