Boterkoek
Boterkoek refers to Dutch soft butter pastry; a butter tart.
Boterkoek is a very rich, thin, chewy and buttery pastry.
The more common version of Boterkoek is made without the ginger and often has a pattern of halved almonds on top but some bake or prepare Boterkoek flavored with crystallized ginger.
