Guvetch
Guvetch refers to a Bulgarian dish similar to Italy's ratatouille which is made from stewing in sunflower oil varieties of vegetables, like green, yellow and red sweet pepper, zucchini, aubergines, green beans, tomatoes, onion, garlic, chili and seasoning and spices. Guvetch is often served with rice or pasta.
The native Guvetch is a mainstay of Bulgarian cuisine, promoted by Bulgarian restaurants. It is a selaed casserole containing a variety of vegetables and may or may not contain meat.
