’Ncapriata refers to a thick soup made of fava beans mashed
with bitter chicory. In this dish, dried fava beans are stewed, peeled and mashed to a puree with chicory, red peppers, onion, tomato and lots of olive oil to make a thick soup. It is one of the specialy foods of Apulia (Puglia), one of the regions of Italy
