Baharat also refers to Arabic word for "spice mix". The mixture consists of pimento, white and black pepper, lots of cinnamon, cloves and nutmeg. This blend is used for enhancing the flavour of fish, chicken, beef, vegetables, particularly okra, tomato sauces and soups.
