Lohikeitto refers to Finnish salmon and cream soup; clear or creamy salmon and vegetable soup. Lohikeitto is a very traditional dish from Finland. Finns eat this year-round and nothing has to be imported. Lohikeitto is salmon soup made of salmon, potatoes, onions and carrots. Usually you start off the soup by frying some sourdough bread in butter before you add some fish stock and the other ingredients with the salmon are adeed last. To serve, lots of cut dill in the soup and cream.
