Revuelto de Zizak refers to Spanish dish of scrambled eggs with St. George's Mushrooms. Revuelto de Zizak is made with scrambled eggs with Zizak (wild tricholoma mushroom), salt and cooked in olive oil. Garlic is sometimes added to enhance the flavor of Zizak. Zizaks or Perretxikos are highly prized and expensive wild tricholoma mushrooms that appear in the spring. They are especially popular in the Province of Alava. Zizak is known in various names: Vulgar Sta Fina, Seta de San Jorge, Muchardón Fina, Seta San Jorge, Muchardón. In Catalán, it is known as Moixeró, Moxernó and in Basque, Zizak, Urrabarri, Perretxico.
