Tapaka refers to Armenian fried chicken. Tapaka is an extremely popular dish in Armenia which is made from a whole baby chicken flattened and marinated in spices and lemon juice, and then fry. Tapaka is garnished with garlic and chopped fresh parsley and often served with roast potatoes.
