Pitha

Pitha refers to Bengali's sweet or savory foods made from rice flour or cream of wheat which are often prepared during the winter season when the newly harvested Atap rice is grounded to make the flour. Atap literally means "untouched by heat" refers to husked rice that is not parboiled.
