Cajeta refers to a Mexican sweet topping or sauce for ice creams and desserts. It consists of caramelized sugar and goat's milk and is thick and creamy. Variations from other Latin American countries also exist and often made with caramel and fruit .
Cajetas which is also often a gelatin are traditionally congealed in a round box four or five inches across, made of thin wood slivers available in different varieties, namely: Cajetas de Leche (based on milk); Cajetas de Membrillo (made of Quince ), Cajetas de Guayaba (made of Guava), and many others. Cajeta is one of the specialties of Aguacalientes.
