Cazuela de Vacuno

Cazuela de Vacuno refers to Chilean beef soup with a potato, rice, a piece of corn and a piece of squash. Cazuela is a rich, soupy casserole/soup cooked with fish, beef, poultry with vegetables, rice, corn, etc. Cazuela already comes in different varieties, with beef is Cazuela de Vacuno, with chicken or poultry is Cazuela de Pollo or Cazuela de Ave.

Calimocho

Calimocho refers to a very popular drink from Spain, made by mixing some red wine with Coke or Cola. Calimocho is said to be developed by the young people from Spain to have their own wine during Botellones. The red wine is mixed with the Cola and drunk straight from the Coke bottle. Calimocho is also known or spelled as Kalimotxo in the Basque Country and Navarre where it is really very popular. In Germany, it is said that a drink called "Colarot" (cola and red as in red wine) exists.

Curanto

Curanto refers to one of the Chile's finest dishes which is an all-encompassing, hearty stew of fish, shellfish, chicken, pork, lamb, beef and potato. Curanto is made from lots of sea food, beef, chicken and pork, potatoes, cheese, and potato "burguers", prepared in a hole in the ground ("en hoyo") or in a pot ("en olla ").

Chifles

Chifles refer to fried thinly sliced green bananas. Chifles are made from platano verde (unripened plaintain), thinly sliced (cut at a 35° angle so it is longer than the thickness of the banana), which is served generally as a side dish.

Cancha/Canchita

Cancha or Canchita refer to toasted corn/maize kernels or beans.

Charqui refers to dried llama meat which is a delicacy from Peru, particularly from Cerro de Pasco.
