Pagello is the Italian word for sea bream, a kind of fish that is best roasted or grilled, can also be made into fish soup, or braised in tomato. Sea breams have a deep, narrow body, small mouth, big eyes, quite large, tough scales, a single, spiny dorsal fin and a black spot on the shoulder.
