Lievre is the French word for "Hare ". The most tender Hare (Lievre) are those which are less than one year old which is good for roasting. While older Hares are made into civets (Civet de Lièvre or jugged hare)
There are available frozen Hares on the market which come from Central Europe and Argentina.
Lievre is also a kind of fish called Blenny.
