Lyoner refers to a type of sausage that originated in the Saarland region of Germany and is closely associated with French cuisine, particularly from the Lyon area. Known also as Fleischwurst, Lyoner is a finely ground sausage made from pork, and sometimes beef or veal, seasoned with various spices.
