Antalya Piyazi refers to Turkish boiled-bean salad with Tahini and vinegar spread generously on top. Antalya Piyazi is one of the specialties from Antalya. Antalya Piyazi is served as a starter dish, and aside from beans other ingredients include hard -boiled egg, tomatoes, sliced onions and parsley for garnishing.
Beside Antalya Piyazi, Sis Köfte or shish meatball is also Antalya's specialty. These two (2) dishes are always found in almost every restaurant in the city.
The city of Antalya which is the capital is Antalya Province is situated on the Mediterranean coast of southwestern Turkey.
Anthocyanin refers to the pigment found in both red grapes and beets that gives them their red color. Anthocyanin is the same element that is responsible for most of the color in red, purple, and blue fruits and flowers. When foods containing Anthocyanin are combined with a substance that is too alkaline, the color will change from red to purple and begin to fade. Adding an acid will prevent this and will even reverse the effect after it has occurred, changing the purple color back to red.

Antiguan Pepperpot refers to green Pepperpot from Antigua that contains spinach. Antiguan Pepperpot differs from common "Pepperpot" in many areas of the Caribbean. It is similar to a spinach soup flavored with smoked pork.
The "Pepperpot" known on most other Caribbic islands is a Native American dish which is believed to be created by the Arawaks. Pepperpot is made of brown, gravy-like stew from cassava / yuca. Although there are several variations depending on which Island prepare it. Some are adding acorn squash, Chayote (Christophene), or Zucchini.
Pepperpot can be served after cooking, but said to still taste good a day or two (2) after cooking.
