Bingdduck / Bingtteok

Bingdduck also spelled Bingtteok (traditonal rolled buckwheat pancakes) refer to one of Jeju ’s special foods. It is a thin pancake has a light texture and a slightly sweet flavor with a balanced savory, slightly salty filling/stuffing. Bingdduck's filling is made of radish strips steamed and tossed with salt, sesame oil and sesame seeds. Bingdduck is cool, salty and refreshing in the summer heat. It has a mild flavor, gentle texture, and is easy to handle, making it a great snack for everybody, including children. Radish is the more common ingredient used as a filling, but sometimes red bean paste is also used. Bingdduck, which is an ancient Korean recipe, has been made in Jeju for over 700 years. It is sometimes called "straw mat dduck" because the pancake is rolled up like a straw mat. Bingdduck is traditionally served at every important ceremony which includes, marriages, funerals, and ancestral worship days. Althought Bingdduck is found and served as side dish in restaurants. To make Bingdduck, prepare the filling and the pancake: To make the filling, slice a large white radish into thin vertical strips. Steam or boil it until soft, drain, and season with salt, sesame oil, and sesame seeds. To make the pancake, knead buckwheat flour and water into dough and form a thin circle about 8 inches across. The pancakes are traditonally cooked on large flat griddles,but a common frying pan can also be used at home. Grease the pan with oil, or use the traditional lard, and cook briefly on both sides until it is set, but not brown. Lay the pancake out, fill with seasoned radish, and roll up. Bingdduck is a part of Jeju heritage which can be enjoyed as a snack food or as a side dish especially perfect during hot summer days. Jeju refers to Jeju Island which is the largest island in South Korea and Jeju Province is one of the nine provinces of South Korea. The province is situated on the nation's largest island of Jeju. Bingsu

Bingsu refers to one of Korea's summer snack. Bingsu means "Shaved Ice with Toppings". It is made of shaved ice topped with fruits, sweet red beans, fruit syrups, cereal flakes and sweetened condensed milk and ususally topped with ice cream or frozen yogurt. It is much like the Philippines' Halo-Halo. However, in Korea Bingsu is called in various names depending on the main topping of the shaved ice: 1. Pat-Bingsu when the topping is sweet red beans 2. Gwail-Bingsu when the topping is fruit 3. Nokcha -Bingsu - a green tea shaved ice, and many more Bingsu is also known as Bingsoo.

Birewecke

Birewecke is a fruit bread from the Alsace Region of France bulging with dried pears, apples, plums, figs, raisins, almonds and walnuts which have been marinated in kirsch, then eaten a week after it has been baked.

Alsace Region lies in the north east of France between the Rhine and the mountains of the Vosges, sharing borders with Germany and Switzerland. Alsace has at different times in history been a territory of both France and Germany and the influences of both countries are reflected in its cuisine. Their variety of dishes have evolved partly from an abundance of local produce and partly from traditional dishes brought from Poland, Germany, Russia and Austria, which have influenced Alsatian cooking.
