Akhni

Akhni a Bengali term for a kind of perfume water made by boiling several spices in a bundle until the original volume of water is reduced to a third. Akhni or this perfume water is used to cook the rice for a Pulao. The Bengali people refers to an ethnic community native to the historic region of Bengal which is now divided between Bangladesh and India in South Asia.

Akkra / Akra

Akkra also spelled Akra, Acra or Accra refers to a Creole fritter made from yeast batter wrapped around a stuffing of meat, fish, fowl or vegetable, and shallow fried in Dendê (palm oil), and looking a bit like a falafel. Accra are most commonly made with salt fish, and are likely also to contain any of, grated black-eyed beans, yams, bananas, aubergines, pumpkin, palm hearts, breadfruit and nuts with which the soaked salt fish is mashed. They may be served with a spicy sauce of chillis, onions and dried shrimp. They are based on a dish of West Africa, probably Nigerian origin and are similar to Brazilian Acarajé. Akotonshi

Akotonshi refers to the traditional Ghanaian stuffed crabs

Akotonshi (Ghanaian Stuffed Crabs)

Ingredients

1 tsp salt
3cm fresh ginger
6 cloves
4 tbsp vegetable oil
1 small onion, minced
1 tsp ground ginger
2 tomatoes, finely chopped
1 tbsp tomato puree
2 bell peppers, finely chopped
2 generous pinches of paprika
1 tsp cayenne pepper
1 tbsp dried shrimp
100g whole-wheat breadcrumbs
1 hard -boiled egg, chopped
1 spring parsley
1kg crab meat

If using fresh crabs clean and dress them then place the crab meat in boiling salted water along with the ginger and cloves.

Aku

Aku is the Hawaiian name for skip jack tuna and also referred to as bonito. This small tuna (6 to 8 pounds) has a light-colored meat similar to yellowfin. The Japanese call this fish "Katsuo". Aku is a fish with firm wine-red flesh and stronger flavor than Ahi. Aku is usually served broiled or grilled.
