Guvetch refers to a Bulgarian dish similar to Italy's ratatouille which is made from stewing in sunflower oil varieties of vegetables, like green, yellow and red sweet pepper, zucchini, aubergines, green beans, tomatoes, onion, garlic, chili and seasoning and spices. Guvetch is often served with rice or pasta.
