Ligo

Ligo is the brand name of the most popular canned sardines in the Philippines and you bet they are popular because in all the Asian stores I have been in Bremen and Hamburg, Germany, only the Ligo brand is available. Ligo canned sardines is a very versatile food which can be made into a lot of dishes. It can simply be sauteed with crushed garlic and chopped onions and they are are ready to be serve with plain rice. My mom used to sautee Ligo sardines with Miswa/Misua, a kind of rice flour noodles and we have a joyous feast no matter what time my mom serves her Ginisang Ligo with Misua. It can be sauteed with other vegetables like Cabbage (Repolyo ) or Bottle Gourd (Upo) and also with Patola. It can also be sauteed with Vermicelli or Mung beans glass noodles and any dish will be delicious with Ligo I grew up with Ligo and we survived poverty, including lack of food because of Ligo. Today, whenever I visit an Asian store in the Philippines, I always pack my bag with Ligo. When I was young, Ligo is available only in green cans and nowadays, they have Ligo in red cans (spicy version) and in white cans which is from Mackarel. Hmmm, I suddenly miss my mom's cooking

Lihapiirakka

Lihapiirakka refers to Finland's meat pasty. It isa pasty of yeast dough or puff pastry filled with cooked and seasoned ground meat into which rice, onion, chopped hard -boiled eggs or other ingredients may be added. Pasties can be baked in oven or deep-fried.

Lihapyörykkä / Lihapyorykka

Lihapyörykkä refer to meatball in Finland. Lihapyörykkä are small and round meatballs made with ground meat mixed with eggs, fresh bread or breadcrumbs, spices, cream, milk or other liquid. Meatballs are fried in skillet or baked in oven. Lihapyörykkä is synonymous to Lihapulla.

Lihiya

Lihiya is from the Spanish word Lejía, meaning lye. Lihiya is a Filipino word which also means lye. Lye is used in both Western / European and Asian cooking. It is used in baking and making Lutefisk in Europe, while Asians use lye water in dessert making, such as the Filipino rice cake Suman sa Lihiya. Lye is also known as Caustic soda.

Lilikoi/Liliko'i

Lilikoi or Liliko'i is the Hawaiian word for "Passion Fruit ", an exotic tropical fruit which is one of Hawaii's favorite island treats. Passion fruit has a slight tart and citrus taste. Both the juice/pulp and seed is edible, but the fruit must be mature, as toxins exist in the immature fruits. While the seeds are edible, it is the fruit that is mostly used. The pulp is normally pressed through a strainer and then bottled as a concentrate. It is normally use in combination with water or other juices, along with fine crushed ice and vodka or tequila to make a delicious frozen cocktail drinks. In Hawaii, it is said that the seeds of the purple passion fruit that were brought from Australia, were first planted in 1880 and the vine came to be popular in home gardens and the yellow passion fruit is thought to be native to the Amazon region of Brazil. Lilikoi is named after the special place on the island of Maui where it was first planted in 1880. Likewise, originally from South America, it is also said that the passion fruit spread to Australia where in 1923, Mr. E. N. Reasoner brought the seeds to Hawaii. Both varieties of passion fruit yield a delicious orange colored juice and edible seeds. Passion fruit is farmed not only in Hawaii, but also in many countries. It is used in a reduced form to make jams, syrups, marinades, canned drinks, concentrates, and butter. It can be sweetened to for a variety of uses, such as marmalade, syrup which can be used on ice cream and pancakes. Passion fruit jellies, mustards, butters, syrups, dressings and teriyaki sauce as well as skin care and aromatherapy products are made on the island of Kaua’i in Hawaii. Delicious foods that incorporate passion fruit is found from the local supermarkets in Hawaii. Liliko'i is pronounced "lee-lee-koh-ee".
